INGREDIENTS

750 milliliters vodka (mid-shelf, neutral flavor)
3 jalapeño peppers, sliced into rounds
1 serrano pepper, sliced (optional, for extra heat)
0.5 habanero pepper, sliced (optional, for serious heat)
1 small cucumber slice or bell pepper strip (optional, to mellow the burn)

STEPS

Prep the peppers: Wash and slice 3 jalapeño peppers, sliced into rounds into rounds. For a milder heat, scrape out the seeds and white pith; for maximum heat, leave them in. Wear gloves if handling 1 serrano pepper, sliced (optional, for extra heat) or 0.5 habanero pepper, sliced (optional, for serious heat).
Combine in a jar: Add all sliced peppers to a clean glass jar or the vodka bottle itself. Pour in 750 milliliters vodka (mid-shelf, neutral flavor), making sure the peppers are fully submerged. Seal tightly.
Steep at room temperature: Store the jar in a cool, dark cupboard. Start tasting after 12 hours using a small spoon (don’t drink straight from the jar with peppers still in — you want to gauge heat, not chug).
Check heat level daily: Keep tasting every 12–24 hours. Most people land on their preferred heat between 24–72 hours total. The longer it sits, the spicier and more vegetal it gets — jalapeño alone rarely needs more than 3 days.
Strain thoroughly: Once it hits your target heat, strain out all solids through a fine mesh strainer lined with cheesecloth or a coffee filter. Strain twice if you want it crystal clear — pepper bits left behind will keep intensifying the burn.
Bottle and store: Funnel the strained vodka back into a clean bottle. Store in the freezer or fridge — cold storage mellows harsh heat slightly and keeps the flavor fresher for 3–6 months.

NOTES
To mellow harshness without losing heat, add a small cucumber slice or bell pepper strip for the last 6–12 hours of steeping, then remove — it takes the edge off without diluting the pepper flavor. If you want it smoother and slightly sweet (closer to some commercial bottled versions), stir in 1–2 tsp of simple syrup after straining. Always taste before deciding it’s “done” — infusion strength varies a lot by pepper freshness and vodka proof.
