Old Fashioned Mashed Potatoes
3-4 lbs potatos, peeled
Heavy cream
Butter
Sour cream or regular yogurt
Cream Cheese
Salt
Fill large pot with water, bring to boil. Cut potatoes into large cubes, cook in water for 17-20 minutes until fork inserts easily but potatoes don’t yet crumble.
Drain, saving about 1-2 cups of potato water.
Put potatoes back in pot. Add 1/2 cup potato water and 1/2 cup cream. Add 1/2 to 1 stick of butter, and 1/4 to 1/2 of cream cheese package. Add sour cream optional. Add salt to taste considering salt in any gravy. Mix with an electric mixer until fluffy.
